Potatoes can be a great addition to any garden. They’re easy to grow, require very little maintenance, and can be harvested in just a few months. To grow potatoes, start your seeds (or “seed potatoes”) in a potato box or in seedling trays. Choose a seedling variety with disease resistance, such as “Red Pontiac” or “Russet Burbank”. Potatoes are ready to harvest when the plant’s leaves and stems start to turn yellow. Cut the plant off at the soil line and carefully dig up each potato with a garden fork. Once dug, leave the potatoes in a cool, dry place to cure for a week before storing.
