Don’t be intimidated by sweet potatoes—they may seem daunting to prepare, but they are in fact one of the most versatile, delicious and nutritious side dishes you can choose. Here’s how to make sweet potatoes in a variety of ways that everyone in the family will love.
Preheat your oven to 375°F and scrub the potatoes to remove any dirt. Depending on the size of the potato, you may need to pierce the potato with a fork several times. Spread a little butter, vegetable oil or olive oil over the potato and sprinkle with salt and pepper. Place potatoes on a baking sheet and bake for 45-60 minutes, turning once to ensure even cooking. The potato is done when you can easily insert a fork.
First, peel and cube the potatoes. Place them in a saucepan and cover with cold water. Boil for 12-15 minutes, until a fork can easily be inserted. Drain the water and mash the potatoes with a potato masher or a fork until you reach desired consistency. Add salt, butter and cream to your taste.
Pierce the potato with a fork several times, then wrap it in a damp paper towel and place in the microwave. Microwave on high for five minutes, turn the potato over and continue cooking for an additional five minutes or until a fork can be easily inserted. Cut in half and top with your favorite toppings.
Soak the sweet potatoes in water for 30 minutes prior to grilling. Preheat your grill to medium heat (350°F). Cut the potatoes in half, lightly brush with oil and season. Place them on the preheated grill, cut side up, and cover with a lid. Grill for about 20 minutes, or until fork tender.
