Grilling salmon can be an exciting outdoor treat, but mastering the seasonings can be a challenge. Besides the traditional flavors you’re already familiar with, you can experiment and try some unique vinaigrettes or spice rubs to bring out the fish’s richness and flavor.
To season your salmon, the first step is to pick the right cut of the fish. Look for bright pink flesh that is evenly-textured and has no discolored spots. Whether you opt for fresh or frozen, thaw it in the refrigerator a day before you want to cook it.
Next, rinse the salmon with cold water and pat it dry with a paper towel. Before adding a rub or glaze, lightly brush the fish with olive oil using a pasty brush – this helps the seasonings really stick.
Rubs
One way you can season the salmon is by using a dry rub. Simply mix together grated lemon rind, garlic powder, black pepper, and a bit of sea salt. Sprinkle the rub over the top of the salmon and then gently and evenly spread the rub over the flesh. Grill the salmon over medium-high heat. The rub should achieve a light crispness.
Glazes
There is a variety of glazes you can use to enhance the look and flavor of your grilled salmon. For a teriyaki flavor, mix equal parts of soy sauce, sugar, and Cook Wine, and add minced fresh ginger. Brush the glaze over the salmon and grill for about 3 minutes per side, basting with the glaze when necessary. Another tasty option would be an orange glaze. Simply mix any store-bought or homemade orange marmalade, soy sauce, and garlic.
Vinaigrettes
For a more classic approach, you can make a quick and easy vinaigrette. In a bowl, combine 1/3 cup of olive oil with 2 tablespoons of white wine vinegar, minced garlic, freshly chopped herbs (like basil, oregano, or thyme) and a bit of lemon juice. For a finishing touch, season the mixture with salt and pepper. Pour the vinaigrette over the salmon and let stand for 10 minutes at room temperature before cooking.
With these simple tips, you’ll be grilling perfect salmon every time. Make sure to experiment and combine flavors until you’ve arrived at a dish that is both tantalizing and packed with flavor.
