Smoking salmon is a great way to enjoy the flavor of the fish without having to cook it. While smoked salmon is usually expensive and hard to come by, it’s easier than you think to make your own smoked salmon at home. Here’s a quick guide on how to smoke salmon.
Start with fresh, wild salmon. Choose the freshest fish possible that doesn’t have any strong aroma. This will make the most flavorful smoked salmon in the end. If you want to smoke multiple kinds of fish, make sure they are roughly the same size to ensure even cooking.
Prepare the fish. Make sure to clean off any scales or small bones. Apply any desired seasoning or rubs, such as salt, pepper, lemon juice, brown sugar, or garlic. Let the fish sit for about 15-30 minutes to let the seasonings soak in.
Prepare the smoker. Most smokers will require different heating and smoking times. Alternatively, you can also use a smoker box in your oven or an aluminum foil wrapper over the fish and a few wood chips. Make sure that the smoke and heat levels are kept low while the salmon cooks.
Place the salmon in the smoker and cover. Let the fish smoke for 2-4 hours, or until the center of the fish reaches an internal temperature of 140 degrees Fahrenheit. You can check on the fish every hour or so to make sure it’s cooking evenly.
Remove the fish and let cool. Once done, remove the fish from the smoker and set aside to cool. Once cooled, you can cut into the fish and inspect the smoked layers to make sure the salmon has cooked properly.
